Breakfast can be quite a challenge for the paleo dieter. But there are some good options if you hunt around a little. Here are a few great Paleo breakfast recipes:
Paleo Fruit Bowl
- 2 Small Plums
- ¾ cup almonds, soaked overnight
- 15 to 20 cloves
- 1 tbsp coconut oil
- 20 mint leaves
- 1 – 2 tbsp raw cacao
It is very important to soak the almonds over night., then peel them. You don’t want the skins. They should come of fairly easily after soaking all night, if soak them in boiling water for a few minutes then try again.
Simmer the cloves for 30 minutes then drain and save the water.
Put some of the clove water, coconut oil and peeled almonds into a blender and give it a whizz. You are looking for a creamy consistency.
The cacao will need to be finely chopped as it will be used to garnish later.
Pour the cream you made into a bowl and arrange all ingredients on top of it. Garnish with the chopped cacao and tuck in and enjoy!
Eggs can be a staple on the paleo diet so why not cook up an omelet? Below is a recipe for a delicious egg omelet.
- 2 Large eggs
- 1 red pepper
- 1 Onion
- 1 Cup of spinach leaves
- 1 Table spoon of olive oil
Beat the eggs in a bowl until yokes and whites are mixed thoroughly. Chop the red pepper into chunks and finely chop the onion.
Chop the spinach leaves.
Put the olive oil in a frying pan and heat up and add the onions. Fry until the onions are going soft and then add the beaten eggs.
Add the pepper and spinach leaves and fry until golden brown.
mmmm Eggs are a great meal all by themselves but when you mix them with bacon you can’t go wrong!
- 3 Eggs
- 5 Bacon strips
- Half an onion
- Olive oil
Add your olive oil to a frying pan. Dice the onion and add with the bacon to a frying pan. Cook the bacon and onion to your liking, I like them burnt!
Whisk the eggs until mixed thoroughly and add to the frying pan with the bacon and onion. Cook until eggs are set and serve. You could garnish with a little fresh chilli if you like.
